Introduction

This came from the 7 Secrets cookbook.. This is me and my family trying to eat healthyer seeing how my husbands maternal grandmothers side of the family is vegans and vegetarians.. Have to get the kids use to eating things like this so when we visit the family they we be ok with the food served.
Walnuts may also be use in place of the pecans..

Number of Servings: 22

Ingredients

    Pecans, 1 cup, chopped (remove)
    *Whole Wheat Flour, 1.75 cup (remove)
    Salt, 1 tsp (remove)
    Molasses, .34 cup (remove)
    Ginger, ground, .5 tsp (remove)
    Honey, .5 cup (remove)
    Applesauce, unsweetened, .5 cup (remove)
    Vanilla, 1tsp
    Baking Soda, 1 tsp (remove)
    Pecans, .5 cup, halves (optional)

Directions

1. Place nuts, flour, salt and ginger in food processor and blend for 1 min.
2. In a mixing bowl, combine flour-nut mixture with remaining ingredients, mix well.
3. Using small ice-cream scooop, place in mounds on a nonstick or lighly oiled cookie sheet, leaving space between cookie for them to spread out. Rap cookie sheet sharply on the counter several times to make cookie spred into large circles (or flatten with spatula). Place a pecan half in center of cookie (optional)
4. Bake at 350 degrees for 15-20 mins. Let cool on the cookie sheet before serving or storing in an airtight container.
