Ingredients

    1-4oz. Cod Fillet
    1 Cup Raw Spinach Leaves
    8 Cherry Tomatoes
    1 Cup Cooked Whole Wheat Angel Hair Pasta
    1 tsp Garlic Powder
    1/4 tsp Salt
    1/2 tsp Pepper
    1/2 tsp Basil
    1/4 Cup Water
    1/4 Cup White Cooking Wine
    1 tsp Lemon Juice

Directions

1. Cook 1 cup of whole wheat angel hair pasta. (That's one cup cooked, approx. 2 oz. uncooked). Drain water.

2. Broil fish for approx. 5 minutes then take out of oven (it will finish cooking in skillet)

3. Mix Garlic Powder, Pepper, Basil, Lemon Juice, Water, Cooking Wine and Lemon Juice into sautee pan. Heat to soft boil then turn down.

4. Cut tomatoes in half and sautee along with spinach and cod in sauce until tender. (I leave the cod whole and baste it in the sauce). Allow to cook approx. 5 minutes--just until veggies are tender and tomatoes are bright red.

5. Pour contents of sauce pan on top of angel hair pasta. Enjoy!!

    Very Good
    Pretty good. Seemed a little too peppery and next time instead of garlic powder we are going to used minced garlic but definitely a quick, easy and healthy recipe. - 4/11/12
