Introduction

Thick tasty soup which is also filling. The lentils are cooked so long that they no longer resemble lentils but make for a thick creamy soup. This recipe is very easy but you do need to plan ahead of time since the beans cook overnight in the crock pot. Thick tasty soup which is also filling. Ingredients

    half bag dry lentils (about 2 cups dry)
    1 can beef stock or bullion
    1 large can plum tomatoes - cut up
    a clove garlic chopped
    large onion chopped
    tsp. olive oil
    raw carrots chopped
    1 cup chopped leftover cooked ham or ham bone

Directions

Cook dry lentils on low in crock pot for 8 hours. Cook chopped garlic and onion in small amount olive oil just until onion is carmelized. Add all ingredients to cooked lentils and cook for another 8 - 12 hours
4 Weight Watchers points per serving
