Introduction

Thick tasty soup which is also filling. The lentils are cooked so long that they no longer resemble lentils but make for a thick creamy soup. Ingredients

    half bag dry lentils (about 2 cups dry)
    1 can beef stock or bullion
    1 large can plum tomatoes - cut up
    a clove garlic chopped
    large onion chopped
    tsp. olive oil
    raw carrots chopped
    1 cup chopped leftover cooked ham or ham bone

Directions

Cook dry lentils on low in crock pot for 8 hours. Cook chopped garlic and onion in small amount olive oil just until onion is carmelized. Add all ingredients to cooked lentils and cook for another 8 - 12 hours
