Introduction

Ingredients

fresh Spinach - 1 bunch
paneer/ cottage cheese/ firm tofu - 400 gms
2 green chillies
3 tsp garlic paste
coriander powder - 1.5 tsp
cumin powder 1 tsp
red chilli powder 1/2 tsp
dry kasoori methi (fenugreek leaves) - 1/2 tsp crushed
turmeric powder - 1/4 tsp
spices for tempering
cumin seeds 1 tsp
1 bay leaf
1/2 inch cinnamon stick
1 brown cardamom
3 cloves
7 peppercorn
Directions
heat 1 cup water (dont let it boil) add washed spinach, cook for 5 min till it wilts, drain and reserve water, puree spinach .
on a non stick pan, spray pam, add 1 nch pieces of paneer, salt and pepper, saute until edges are light brown and slightly crunchy sprinkle some lemon juice and keep aside
mix coriander, cumin and red chilli powder in a bowl in 2 tbsp water to make a paste
heat oil , add cumin and other spices, let them splutter for 1-2 min
add garlic cook till it turns brown, then add turmeric, saute for 1 min
add red chilli paste and saute until oil starts to ooze out
add green chillies and fenugreek leaves, cook 1-2 min
add spinach puree and the reserved water
let it simmer for 5-10 min
add paneer pieces and simmer another 5 min
and serve over rice or chapati
