Ingredients

6 chicken cutlets (or 3 checken breasts sliced in half)
6 smaller pieces of pre-packaged ham
about 1/2 cup garlic & herb feta cheese
1/2 cup of olive oil
6 basil leaves
1 clove of garlic
6 toothpicks
Directions
While pre-heating oven, use large sized baking dish to prepare (I use corelle deep dish bakeware...for like casseroles). Drizzle 1/2 cup of olive oil in bottom of dish, creating a thin layer of olive oil. Place a piece of chicken cutlet in olive oil and coat entire piece of chicken with olive oil. Take a ham slice and center it onto the chicken. Use about a teaspoon full of feta cheese to place in the center of ham (don't use too much or cheese will spill out of the sides when you roll). Next, roll chicken, ham, feta and one basil leaf tightly. Secure with a toothpick in the center. Repeat 6 times or more, depending on how much you make. Once all 6 pieces are finished, sprinkle the entire top with italian seasoning.
Bake for about 45 minutes, uncovered. No flipping necessary.
*Tip: I do not use any kind of sauce for this recipe because the olive oil keeps the chicken moist, but If you prefer, you could look-up an easy white sauce recipe in a cookbook or on-line to pair with the chicken.
