Ingredients

2 boneless skinless chicken breasts
1 red pepper diced
1 cup diced zucchini
1 can of diet coke
3/4 cup of Heinz ketchup
1 tbsp all purpose flour
1/4 teaspoon crushed red pepper flakes
salt and pepper to taste
Directions
1. slice chicken into strips, dice red pepper and zucchini
2. Cook the Orzo according to package directions
3. pour can of coke into a medium-large frying pan on medium heat and let simmer for 2 minutes.
4. Add the ketchup to the diet coke and whisk to combine, bring to a boil.
5. Add the chicken to the sauce, reduce heat to medium and cover, cook for 8-10 minutes or until chicken is cooked through.
6. While chicken is cooking heat another pan with a dash of olive oil and add the peppers and zucchini
7. Season the peppers and zucchini with salt, pepper and crushed chili flakes.
8. Remove the chicken from the sauce and set aside.
9. Simmer the sauce for about 5 min. then whisk in the tbsp of flour to thicken.
10. Return the chicken to the sauce and heat through.
11. Plate the Orzo and top with chicken, sauce and vegetables.
