Introduction
This isn't my recipe but rather comes from blogger NYC Pink (nycpink.blogspot.com) with one small modification (less oil / more applesauce). When I make these, I don't measure out the spices but rather use 2 Tsp. pumpkin pie spice. Please visit the blog. She's pretty darn cool. Ingredients

3/4 C. AP flour
1/2 C. whole wheat flour
1/4 C. not packed brown sugar
1-1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3/4 tsp cinnamon
1/4 tsp ground ginger
Couple shakes of nutmeg
A shake of ground cloves
3Tbs. applesauce
1 C plain light soymilk
1 C canned pumpkin (puree, not pie mix)
1 Tbs canola oil
1 tsp vanilla
Directions
Mix the dry ingredients together. In a separate bowl, vigorously whisk together the wet ingredients until emulsified. (I actually do this right in a 2 C measuring cup.) Pour the wet into the dry and combine. Let the mixture sit for about 10 minutes while your waffle iron heats up.
This makes 4 large waffles in my Cuisinart waffle maker (plain, not Belgium), using 1/3 C of mxiture instead of the normal 1/2 C to make them stretch out to 6 servings. To serve, top with 1 Tbs of applesauce, a sprinkle of cinnamon and a small drizzle of maple or pancake syrup. A small sprinkling of chopped nuts isn't bad either.
