Introduction

Barley is a Canadian grain that bakes up like a dream and is a perfect partner to any stew. Here, accented with vegetables and pine nuts/almonds, it's a particularly nice change from the usual rice.
A Wonderful Ukrainian lady I work with made this and I just couldn't get enough!!! It's super filling and makes a great veggie lunch or side dish.

Ingredients

    1tbs butter
    10 green onions, chopped-or 1.5 large white onion
    4-6 cloves of garlic, minced
    2 of each: Carrots and celery, finely chopped
    1.5 cups Pearl or Pot barley
    0.5 tsp each: Salt and Pepper
    4.5 cups Chicken Stock
    2tbs chopped fresh parsley
    3/4 cup pine nuts or slivered almonds...almonds are less cals.


Directions

In a large heavy o venproof skillet, melt butter over med heat; cook onions, garlic, celery and carrots for 3min until just softened.
Stir in barley, salt, pepper until well coated. Pour 2.5cups of the Chicken broth in. Cover and bake at 350 for 30min.

Stir in parsley and remaining stock; sprinkle with pine nuts or slivered almonds. Bake, uncovered for 45min or until liquid is absorbed and barley is tender.
