Ingredients

    1 Bunch kale, cleaned and stripped from stems, chopped
    1/2 onion, coarsely chopped
    2 cloves garlic
    2 tsp olive oil
    2 15 oz cans cannellini beans, drained
    1 cup water
    salt and pepper to taste

Directions

Heat olive oil in a large skillet with a lid. Add chopped onion. Cook until soft. Add sliced garlic cloves. Cook 2 more minutes. Add kale and water, cover and cook until kale is tender, about 30 minutes. Add drained beans and heat through. Makes 8 servings.

I serve this over brown rice.
