Ingredients

1 Cup Splenda Brown Sugar Blend
2/3 Cup Splenda
2 Cups Cooked, Pureed Butternut Squash
1 Cup Unsweetened Applesauce
1 Teaspoon Vanilla Extract
1 Teaspoon Morton Lite Salt
3 Tablespoons Psyllium Powder
4 Teaspoons Ground Cinnamon
1 Teaspoon Ground Nutmeg
1/8 Teaspoon Ground Ginger
1/8 Teaspoon Ground Cloves
3 Teaspoons Baking Powder
3 Tablespoons Psyllium Powder
3 Cups Flour
4 Cups Rolled Oats
Directions
In large bowl, stir Splenda(s), Salt, Spices, Baking Powder, Psyllium Powder, Squash, Applesauce and Vanilla Extract with wire whisk until well blended. Using a large spoon, gradually stir in flour. After flour is well blended into mixture, add oatmeal 1/2 cup at a time until all 4 cups are blended into the mixture.
Line cookie sheets with silicone coated parchment paper. Drop dough by rounded teaspoons, 2 inches apart. Bake in 350 degree oven for 11 minutes. Allow cookies to cool for 2 minutes before transferring to cooling rack.
Cookies will not change shape during baking. If you want a flat cookie, spray a drinking glass with non-fat cooking spray and dip it into a cinnamon/sugar mixture. Press dough until about 1/4 inch thick. Note: extra cinnamon and sugar is not added into calorie the count.
Makes 7 dozen small cookies
