Introduction

I revised the original recipe to reduce the fat in the muffins by replacing half of the oil with applesauce. I revised the original recipe to reduce the fat in the muffins by replacing half of the oil with applesauce.

Ingredients

    3/4 cup skim milk
    1 large egg
    1/4 cup canola oil
    1/4 cup applesauce
    2 cups flour
    3 tsp. baking powder
    3/4 tsp. salt
    1 cup blueberries

Directions

Preheat oven to 350 degrees. Spray 12 cup muffin pan.
Beat together milk, egg, oil and applesauce. Stir in flour, baking soda and salt just until moistened (batter will be lumpy). Fold in blueberries. Fill muffin cups evenly and bake at 350 degrees for 20-25 minutes. Remove immediately from muffin pan. Enjoy!
