Ingredients

1 Acorn Squash
1 Cup Morningstar Farms Sausage Crumbles
1/2 Sweet Onion, diced
1/2 Granny Smith Apple, diced
1 Celery Stalk, diced
1 Carrot. diced,
1 clove Garlic, minced
1 cup Quinoa, cooked in vegetable broth
1/2 tsp dry Sage
1/2 tsp Oregano
Salt & Pepper, to taste
1 tbls Sunflower Seeds
Directions
Preheat oven to 350 degrees
Cut the squash in half and remove seeds. Place in a baking dish, cut side down, with about an inch of water. Bake in the oven for 40 minutes
While the squash is baking, brown the sausage. Remove from the pan and saute the onion, carrot, apple, garlic and celery in the same pan, seasoning with salt and pepper. Return the sausage to the pan. Stir in the quinoa, sunflower seeds,
When the squash has baked, discard the water and turn the squash over. Stuff with the sausage mixture. Return to the over for about 20 minutes.
After removing from the oven, sprinkle with grated parmesan cheese.
