Ingredients

    3/4 cup sugar
    3/4 cup brown sugar
    1/4 cup vegetable oil
    1 tsp vanilla
    2 egg whites
    1 (5 oz) pkg chocolate pudding (not instant)
    1 (8 oz) pkg sour cream, reduced fat
    2 cups flour
    1.5 cups rolled oats
    1 tsp baking soda
    1/2 tsp salt
    1 cup chopped walnuts
    1 cup mini chocolate chips (semi-sweet)

Directions

**Makes approximately 72 cookies

Heat oven to 375 degrees. Place parchment paper on cookie sheets. In large bowl, combine sugar, brown sugar, oil, vanilla, egg whites, pudding mix, and sour cream until moistened. Add flour, rolled oats, baking soda, and salt; mix well until blended. Stir in nuts and mini chocolate chips.

Drop by rounded tablespoonfuls about 2 inches apart onto lined cookie sheets. Bake at 375 degrees for 7-8 minutes or until set. DO NOT OVERBAKE! Cool for 1 minute before removing from cookie sheets.
