Introduction

Turkey chili with black beans, corn and rice. Turkey chili with black beans, corn and rice.
Number of Servings: 16

Ingredients

    2 lbs lean ground turkey
    2 cans LOW SODIUM black beans
    1 can LOW SODIUM kidney beans
    2 cans sweet corn, 1 can drained
    2 cans tomato soup, 1 can water
    2 packets LOW SODIUM taco seasoning
    1 large jar medium salsa (approx 44 tbsp)
    4 cups white rice

Directions

Brown ground turkey in skillet; drain. Put turkey in crockpot. Add beans, corn, tomato soup, water, salsa, and taco seasoning to crockpot and stir.

Cook on high 2-4 hours, or low 4-6 hours. I prefer cooking on low to allow the flavors to have longer to meld.

With a half hour left, cook rice. Add cooked rice to crockpot and stir.*

I like to top each serving with shredded mexican blend cheese and sour cream. Serve with a side of tortilla chips.

Makes approx. 16 one cup servings.

*I use instant (boil-in-bag) rice. Allow extra time for non-instant rice.

NOTES:
To cut way down on sodium, make your own taco seasoning. Even with the low sodium ingredients, it's still got more than I'd like. Making your own will decrease the sodium quite a bit.
