Ingredients

    2 Tbl extra virgin olive oil\
    10 oz whole wheat pasta
    .25 C. whole wheat flour
    .5 C. 2% milk
    3.5 C. shredded Cheddar
    sauteed Garlic and onion to taste.
    salt and pepper to taste

Directions

boil and cook 10 oz. of whole grain rotini
saute onion and garlic in 2 T. oil.
add flour and milk and stir until it begins to thicken
add the 2.5 C. of cheddar ( 1C. at a time) and stir to combine... Sauce will be thick...
pour over cooked/drained pasta and mix together...

makes 5 2 oz. servings
