Introduction

Great, high fiber beans. If you haven't worked with these before, be warned they get VERY large when soaked.
I made this as-is and let each person add whatever they like. I add a little salsa and a dollop of light sour cream. Others may choose to add a little shredded cheese.

Ingredients

    2 lb. mayocoba beans, sorted and soaked
    4 c. (one full box) Trader Joe's Organic Low Sodium Vegetable Broth
    3 c. water

Directions

Place all ingredients in slow cooker. Turn to low for 4 hours.
Makes approx. 24 1-cup servings.

    I am cooking this, but if it makes 16 1 cup servings, how can the number of serving be 24? Is a serving less than 1 cup? - 1/18/11

    Wow...must have been a typo on my fault. Sorry. Was switching over my brain to my new, larger crockpot. 22-24 servings of 1 cup each. I'll fix it.
