Ingredients

    6 eggs
    1 c coconut milk unsweetened
    1/2 c frozen spinach
    1/2 c frozen corn
    1/2 c chopped onion
    2 med carrots
    1 clove garlic
    1/4 c fresh parsley
    3 fresh basil leaves
    Salt pepper to taste
    Olive oil to grease pan and saute veggies

Directions

Makes 8 servings

Sauté veggies in oil, put in 9" round baking pan
Mix eggs and milk and spices
Pour egg over veggies
Bake at 375 for about 30 min
