Number of Servings: 6

Ingredients

    6 cod fillets
    1/2 medium onion, chopped very fine
    3 cloves of garlic, minced very fine
    1 tbsp. melted butter
    1 Lime--juiced
    2 oranges--juiced
    Zest from orange (about 1-2 tsp)
    *Zest from lime (optional)

Directions

In a small bowl, mix the finely sliced onion and garlic, butter, lime juice, orange juice, and zests. Place Cod on a broiler pan. Spoon mix onto fish (about one heaping tbsp per fish, spread out). Reserve extras. Broil (or bake) for 4 minutes. Remove from oven. Flip fish. Spoon mix onto fish (same as above). Place back in oven and broil for another 4 minutes or until the fish flakes easily with a fork.

    The kids thought it was just "OK", but I enjoyed it. Somehow, there was a faint smell of coconut, and I think I will use it as inspiration, and try adding some coconut milk next time. - 2/28/11
