Modified the recipe to what I use. Recipe called for salt / I don't use it due to low sodium diet. Recipe still has 600 mg sodium per serving. I discard the egg yolks due to low cholesterol diet, which also dropped the calories a lot.

Ingredients

    * Chicken Breast, no skin, 16 ounces / chopped
    * Hard Boiled Egg, 4 cup, chopped [discard the yolks]
    * Celery, raw, 2 cup, diced
    * Almonds, 0.5 cup, sliced / toasted & chopped
    * Onions, raw, 2 tbsp chopped (remove)
    * *Lemon Juice, 1 fl oz (remove)
    * Kraft Mayo Light Mayonnaise (Mayo), 16 tbsp (remove)
    * Cheddar Cheese, 0.5 cup, shredded (remove)
    * *Pringles -- 100 Calorie Pack, 1 serving (remove)

Directions

1. Combine chicken, eggs, celery, almonds, salt, onion, and lemon juice in bowl; fold in mayonnaise.
2. Turn into greased casserole dish; top with potato chips and cheese.
3. Bake at 450 degrees F for about 12 minutes or until salad is bubbly and cheese is melted.

    Incredible!
    Except the almonds, this is similar to my Aunt's recipe.
    But, how many hard boiled eggs? I am guessing four eggs & not 4 cups. This healthier version sounds great.

    Sorry. It was suppose to be the whites of 4 eggs. You could increase the number due to discarding the yolks. I am making this tonight & don't want to buy pot. chips. I am crushing a half cup of pretzels for the topping. Could omit. I add a lg chopped bell pepper. I like veggies crisp-tender.
