Ingredients

    1 cup chopped onions
    5 cloves garlic
    3T olive oil
    1 red pepper chopped
    1 celery chopped
    3 tomatoes chopped
    2 cans 15 oz kidney beans, rinsed and drained
    6oz tomato paste
    1 cup frozen corn
    1 t salt, chilli powder
    1/2 t black pepper
    1/4 t cumin, cayenne pepper, oregano, ground coriander
    1.5 c chicken broth
    1 med eggplant chopped

Directions

cook garlic, and onions, then saute eggplant until tender (both in oil)
add rest of ingredients, stir, cook in crock pot 6-8 hours on low or 3-4 on high.
