Number of Servings: 12

Ingredients

    2 c almond flour (almond meal)
    1 c Brown rice flour
    4 tablespoons Flax meal
    2 teaspoons baking powder
    1/4 teaspoons salt
    3 teaspoons Vanilla extract
    4 eggs
    1/3 c water
    1/2 c honey or agave'
    1 Simply Fruit blueberry (about 1 cup)

Directions

1. Preheat oven 325F
2. Prepare muffin tins (12)
3. Mix dry ingredients together well
4. Add wet ingredients and mix thoroughly
5. Put 2 tablespoons worth of the mix in each cup
6. Put 1 heaping teaspoon of the fruit in each
7. Put 1 tablespoon worth of the mix on top, creating a seal This is a FULL tin.
8. Bake for about 30 min. checking to make sure the top is set and starting to get golden brown. May take a bit longer than the 30 min.
9. Remove muffins to racks and cool. Serve warm!
