Ingredients

    4 cups water
    4 tsp Better than Bouillon Vegetable Base
    4 cups no salt added tomato juice
    1 1/2 cups chopped carrots
    1 1/2 cups chopped celery
    1 cup chopped onion
    1 cup chopped zucchini
    3 garlic cloves, minced
    1 can (14.5oz) no salt added diced tomatoes
    1 can (14.5oz) no salt added diced tomatoes w/ basil, garlic & oregano
    1 tbsp dried basil
    1/2 tsp dried oregano
    1 tsp salt
    1/4 tsp black pepper
    1 1/2 cup (4.5 oz) multigrain rotini, uncooked

Directions

1. Combine all ingredients, except pasta, in a 4-5 quart crock pot.
2. Cook on low 7-8 hours or until vegetables are cooked.
3. Stir in pasta and cook on high for 15-20 minutes or until pasta is cooked. Top servings with parmesan cheese, if desired.
