Ingredients

4 3-ounce boneless pork cutlets
1/2 cup bottled BBQ sauce
1 cup canned, crushed pineapple with juice
1/4 tsp ground black pepper
Cooking spray
Directions
Preheat oven to 350 degrees. Place one cutlet between two sheets of plastic wrap and, using a meat tenderizer or rolling pin, pound the cutlet to 1/4-inch thickness. Repeat for remaining 3 cutlets. Set aside. In a medium bowl, combine the BBQ sauce, pineapple, and pepper. Coat a large, shallow baking dish with cooking spray. Line the bottom of the dish with the pork cutlets an cover with BBQ sauce mixture. Bake for 20 minutes or until the pork is done.
