    2 lbs ground beef
    1 small onion, chopped
    salt & pepper to taste

    2 cans kidney beans
    3 cans chopped tomatoes
    1/2 cup ketchup
2 Tbsp sweet pickle juice (or vinegar)
    1 tsp tobasco sauce
    3-4 heaping Tbsp chili powder

Mix ground beef and onion with salt and pepper. Scramble-fry until no pink remains. Drain fat. Add remaining incredients and stir together. Simmer for at least 30 minutes. NOTE the longer chili simmers, the hotter it gets, so do not adjust the amount of chili powder until it has simmered for a while.

I really liked this but it wasn't spicy enough for me. I think next time I will add a can of tomatoes with the chiles in it or maybe dice up a jalapeno. I put it over rice with a little shredded cheddar on it. Also I cooked my in the crock pot once I browned my burger. - 2/11/10
