Ingredients

    1 (6oz) container Kroger Lite vanilla yogurt (or apple flavor)(yogurt has 80 cals a container)
    1 cup sugar (or use Splenda and save approx 60 cals a muffin)
    1 large egg
    1 tsp vanilla extract
    1 1/2 cup flour
    2 tsp cinnamon, ground
    1/2 tsp baking soda
    1/4 tsp salt
    1/4 cup chopped walnuts
    6 caramels
    2 large apples
    PAM or like Butter Spray

Directions

Recipe makes 12 muffins
Pre-Heat oven to 350 degrees

~Spray a 12 muffin tin with Pam.
~Spray a non-stick skillet with Pam and heat over medium heat.
~Slice 1 large apple into 1/8 inch slices and saute till soft and just turning brown in pan.
~When cooked, divide apple slices into the sprayed muffin tin.
~Stir together the sugar, yogurt and egg in large bowl. Add vanilla.
~Stir together flour, cinnamon, baking soda and salt....add to large bowl.
~Batter will be very stiff.
~Chop Finely the other large apple (should equal 1.5 cups) and add to batter.
~Divide the 1/4 cup of chopped walnuts between the 12 muffins, placing the bits on top of the cooked sliced apple.
~Spoon apple mixture into muffin tins by using a tablespoon....only add 1 tbl per muffin...(there will be about 1/2 the mixture left)
~Cut the 6 caramels in half and stick 1/2 into each muffin in the middle.
~Spoon remaining apple batter into muffin tins, covering the caramel.
~BAKE at 350 degrees for 20-25 minutes
~Remove muffin tin from oven and let sit for 15 minutes, then slide muffins out keeping the apple slices on the top and place on a plate to cool.

By using the Splenda, the muffin calorie count goes down to 119 cals.
