Introduction

This is a decadent super-rich, super chocolately, low-calorie pound cake that's a spin off of a brownie recipe. It's delicious on its own, or when topped with cherry pie filling and fat free cool whip. Ingredients

    - 15 oz can of black beans (drained and well rinsed)
    - 4 large eggs
    - 1/4 cup molasses
    - 5 tbsp cocoa powder
    - 2 tbsp instant coffee, dissolved in water.
    - 1tsp baking powder
    - 2 tbsp olive oil
    - 1 tbsp vanilla
    - 2 tbsp semisweet chocolate chips

Directions

1. Combine the beans, eggs, molasses, cocoa powder, coffee, baking powder, olive oil and vanilla in a blender. Blend until smooth.
2. Preheat oven to 350 degrees.
3. Coat a loaf pan with cooking spray. Pour mixture from blender into pan.
4. Sprinkle chocolate chips evenly over the top of the mixture.
5. Place pan in the oven for 25-30 minutes.

Allow to cool before cutting into 8 slices.

It's delicious on its own or topped with 2 tbsp cherry pie filling and fat free cool whip.
