Ingredients

2 Fillets Haddock (smoked is best)
1/2 pint Milk
1 chopped Leek
1 cup chopped Broccoli
2 tbsp Butter
2 cups diced Potatoes
1 heaped tbsp Plain flour
1 tbsp Mixed herbs
2 tbsp Breadcrumbs
Directions
1. Poach the haddock in the Milk for around 3 mins, until almost cooked and beginning to flake.
2. Remove and reserve the fish and pour milk into a jug.
3. Melt half the butter in the pan and add the leeks. Cook for around 4 mins, until translucent. Add the herbs.
4. Add the flour slowely, stirring to make a rue. Stir in the reserved milk and stir until thickened.
5. Add the broccoli and the reserved haddock, mix in and leave to simmer for 10 mins, until broccoli is cooked.
6. Meanwhile, place the potatoes in a pan of boiling slightly sated water, cook for 10 - 15 mins, until soft.
7. Mash the potatoes, with the remaining butter.
8. Combine in a casserole dish, fish sauce then mashed potato. Spread the breadcrumbs on top and grill for 3-4 mins until golden brown.
You can use any herbs you like, not just a mixed bunch - also paprika goes well!
