Ingredients

    Chicken Breast, no skin, 0.5 breast, bone and skin removed
    Lemon Juice, .25 lemon yields
    Cilantro, raw, 4 tbsp
    Butter, 1 pat
    Garlic, finely chopped, 1 tsp.
    Jalapeno Peppers, .25 pepper
    Monterey Cheese, 1 slice (1 oz)

Directions

Marinate chicken in lemon juice for about 1-2 hours.

Broil chicken until light golden on both sides.

Top chicken breasts with 4-6 thin slices of jalapeno and continue to cook.

Quickly sautee about half the cilantro with butter and garlic until butter is melted and cilantro is slightly wilted.

Top chicken breasts with sauteed cilantro and fresh cilantro; cover with sliced Monterey Jack cheese. Broil until cheese is melted, bubbly, and slighly browned.

Serve immediately with tossed salad, rice, or veggies.

Serves one. May be increased as needed.
