Ingredients

    2 boneless, skinless chicken breasts
    1 can of Diet Coke
    1/2 cup of salsa (more or less to taste)
    Balsamic vinegar (more or less to taste)
    1/2 cup flour
    1/2 cup water
    Salt, pepper, garlic powder, Italian seasoning (you can use essentially any seasonings you want, play around with different flavors.)
    1/2 cup coconut milk (optional)




Directions

Cut chicken breast in half, to create 4 thinner pieces.
Mix dry seasonings in flour and cover chicken
Add chicken, coke, salsa, vinegar, coconut milk to saucepan on medium heat. Simmer for 30 minutes.

You may need to cook the breasts two at a time, which is fine. Just set the cooked chicken aside, add the other pieces and a little water, a little more coke, a little more salsa, ect. If it is easier for you, you can essentially add all off the ingredients to the pan at once. There are so many variations of this recipe, it's fool-proof. Most importantly, have fun. ;]
