Ingredients

    1/2 cup quick cooking oatmeal
    1/2 cup low fat cottage cheese
    4 egg whites, gently whipped
    1/2 tsp baking powder
    1 envelope of Stevia sweetener
    1 banana, sliced

Directions

Makes 6 pancakes. 1 Serving is 3 pancakes so half of recipe.
Put cottage cheese, whipped egg whites, cottage cheese and stevia into blender. Mix so you get a smooth-ish liquid. Then add oats and pulse a few times so ingredients are mixed (but still a little lumpy). Let sit for 5 minutes to thicken a little.
Spoon about 1/3cup of batter into a pan (usually can fit 3 of them) and cook until little bubbles appear on the top. Flip, and cook for 1 more minute. Each of the servings gets 1/2 banana.
