Ingredients

    1/4 cup chopped fresh basil leaves
    2 cloves garlic, finely chopped
    1 tblsp chopped fresh rosemary leaves or 1 tsp dried rosemary
    2 tsp grated fresh lemon peel
    1/4 tsp salt
    1/3 cup olive or vegetable oil
    3 tblsp red wine vinegar
    1 1/3 lb cooked deveined peeled medium shrip with tails (31 to 35 count)
    4 medium tomatos, sliced
    1/4 cup pine nuts

Directions

1. In medium bowl, mix all ingredients except tomatoes and pine nuts. Cover; refrigerate at least 2 hours but no longer than 24 hours to marinate and blend flavors.

2. Just before serving, stir shrimp mixture. Dividing mixture between 2 dinner plates, serve shrimp over tomatoes slices, spooning marinade over tomatoes and shrimp, if desired. Top with pine nuts.

3. Cover and refrigerate any remaining shrimp mixture.

COOKING TIPS:
Success- The marinade may turn cloudy in the refrigerator as the oil solidifies, so let the shrimp stand at room temperature for 10 minutes before serving.
Did You Know?- There is no need to thaw the shrimp if you purchase them frozen, as they will thaw while marinating.
