my take on a healthier version of wedding soup my take on a healthier version of wedding soup
Number of Servings: 10

Ingredients

    3 boneless, skinless chicken breasts, poached & chopped
    3 cloves of garlic, grated or chopped
    chopped onion
    1 package of frozen spinach
    white beans
    2 cups chicken broth
    any small shaped pasta such as orzo, stars, etc.

Directions

as I am poaching the chicken, I saute the onions, garlic, spinach & beans in a big soup pot. Then I add the chopped chicken & season to taste (usually just a bit of pepper). Then I add the chicken broth & bring to a boil. When the soup is boiling add the pasta, let boil about 4 min. & then turn down to simmer. After the soup cooks about 10 more min. enjoy - plus it can simmer on the stove all day & is great left over!!
