Ingredients

1 Tbsp. + 1 tsp. olive oil
4 (4oz.)boneless center-cut pork loin chops
1 Tbsp. ground cumin
1/4 tsp. salt
1/8 tsp. pepper
3 medium apples, peeled and chopped
1/2 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1/2 tsp. vanilla extract
1 tsp. grated lemon zest
Directions
Combine cumin, salt, and pepper in a small bowl. Rub spice mixture on both sides of pork chops.
Heat 1 Tbsp. of the olive oil in a large skillet over medium-high heat. Add the pork chops and cook until cooked through, only turning once, about 3-4 minutes per side. Remove pan from heat.
Meanwhile, in a small saucepan over medium heat, heat the remaining 1 tsp. of olive oil. Add the apples, cinnamon, and nutmeg. Cook, stirring frequently and mashing with back of spoon or potato masher, until thick and tender, about 6 minutes. Remove pan from heat and stir in the vanilla and lemon zest.
Makes 4 servings(1 chop with about 3 tablespoons of sauce)
