1 can pumpkin puree
2 ripe bananas
1 tsp vanilla
2 large eggs
1/2 cup brown or white sugar (I used brown)
1 cup quick rolled oats
2 cups white or whole wheat flour (I used 1 of each)
3/4 cup flax seed meal
1.5tsp baking powder
1/2 tsp soda
1/4 tsp salt
1 tsp pumpkin pie spice
Directions
Makes 2 loaves, 8 slices each loaf
Preheat oven to 350*. Mix pumkin, bananas, vanilla, and eggs (and brown sugar if using). Add flour, oats, flax (white sugar if using), baking powder, baking soda, and spice.
Put in greased loaf pans and back 45-50 minutes.
