Ingredients

    1 Can (14.5 oz) Stewed Tomatoes
    1 Can Stokes Green Chile Sauce w/chicken (14.5 oz)
    1 small can hot diced chiles
    .25 Cup frozen fiesta corn
    4 oz. Chicken Breast (from Rotisserie chicken)

Tips

I quadruple the recipe and keep it on hand for quick, lo-cal lunches.


Directions

Makes 4 1-cup servings

Combine the canned tomatoes, green chile sauce, frozen corn, with left-over chicken. Add hot chiles to taste. Heat thoroughly, and eat. Good with steamed corned tortillas. (To heat the tortillas, wrap in paper towel (2-4 tortillas at a time) and microwave for 2 minutes.
