Ingredients

    1 box of Chocolate Fudge cake mix (or any other flavor cake mix).
    1 cup canned pumpkin.
    1 egg white.
    Vanilla, cinnamon and additional sweetner to taste.

Directions

Whisk egg white. Add to canned pumpkin. Mix dry cake mix to 2 packages of oatmeal.
Mix wet and dry ingredients well. Use a mellon baller (or a 1 tablespoon scoop) to drop into mini muffin tins.
Bake at 350 degrees for 20 miniutes or till brown/done and a toothpick comes out clean.
