Ingredients

    4 slices smoked bacon, diced
    1/2 cup each diced celery, onions and red peppers
    2 tsp each minced garlic and serrano chili pepper
    2 Tbs. double concentrate tomato paste
    1 cup dry green lentils
    2 large vegatable boullion cubes
    3 parsley sprigs

Directions

In saucepot over medium heat, cook bacon 4 min or until crisp. Remove and discard all but 2 Ybs drippings.

Add next 3 ingredients to drippings in saucepot; cook 4 minutes. Stir in garlic, chili pepper and tomato paste. Cook 30 seconds. Add remaining ingredients and 6 cups of water.

Increase heat to high and bring to a boil. Stir in 1/2 bacon. Reduce heat to medium; let simmer 45 minutes or until lentils are tender. Remove and dscard parsley. Sprinkle with remaining bacon.
