Ingredients

1 (6oz) snapper fillet, bones removed
.5 c black beans
7 asparagus spears (chopped)
.5 cup diced red bell pepper
4 garlic cloves (smashed with back of knife)
1-2 limes, juiced and zested
.5 Tbsp adobo seasoning (or just plain salt & pepper or cumin is good too!)

Directions
Preheat oven to 425 F
Cut 1 (15 x 24 in) piece of parchment paper and fold in half. Cut out a giant heart from the folded parchment, just like when you were a kid on Valentine's Day.
Open the heart and in the middle of one half evenly distribute the black beans, asparagus, red pepper, carrots & garlic. Sprinkle with 1/2 of the seasoning.
Rinse snapper fillet and pat dry. Rub fillet with remainder of seasoning, and place on top of vegetable mixture.
Cut the lime in half and squeeze juices over fish and vegetables. Should yield about a tbsp of liquid, however a second lime might be needed. Sprinkle 1 tsp of lime zest over mixture.
Fold edges of parchment creating a seal with narrow folds. Start at the top of the heart and work down toward the point, then twist the end to secure tightly.
Place packet on baking sheet, and bake for 12 minutes. Remove from oven; and let stand 5 minutes before transferring to a plate and cutting open the paper. Garnish with lime slices if desired.
