Ingredients

    1-2 cups chopped mushrooms
    3 medium red tomatoes
    2 bunches fresh spinach
    1 can diced tomatoes
    1 can tomato paste
    2 green bell peppers
    4 boneless skinless chicken breasts
    1 cup red wine
    1.5 large white onions
    3-5 cloves garlic
    pam
    2 tsp basil
    2 tsp rosemary
    1 tsp thyme
    1 tsp cayenne pepper
    2 bay leaves
    salt
    pepper
    12 green olives

Directions

Spray skillet with Pam and heat. Brown chicken breasts (about a minute on each side) and set aside. Add chopped mushrooms, peppers, onion, olives, garlic and spinach to pan and sautee until onions are translucent (about 10 minutes). While the vegetables are cooking, chop the tomatoes. Add wine, tomatoes, tomato paste and 1.5 cups water to the vegetables. Add spices to mixture and stir. Add chicken breasts and cook for 5-10 minutes until cooked just through. Remove chicken breasts and let cool. Once the chicken is cool, shred the chicken and return it to the vegetable mixture. Serve over whole wheat pasta with parmesan cheese. Makes about 6 servings (of about 1.5 cups).
