This soup is very hearty---higher in fat than some may like but with still many less calories than they typical, having omitted the heavy cream and an additional cup of cheese.This soup is very hearty---higher in fat than some may like but with still many less calories than they typical, having omitted the heavy cream and an additional cup of cheese.

Ingredients

Chopped Broccoli
Onions
Carrots
Celery
Flour
Butter
Chicken Broth
Skim Milk
2% Cheddar Cheese
Salt and Pepper to taste
Directions
makes 15- 1 cup servings.
Saute onions, carrots and celery in butter until soft. Add broccoli and continue to cook until it softens as well. Add flour and coat all veggies, continuing to stir. Gradually add chicken broth, 2 cups at a time, every 5 minutes. Continue stirring. Let soup cook together on medium heat for 30 minutes or so until flour taste has cooked out. Remove i cup of soup. Gradually stir milk into that cup of soup. Mix well. Slowly pour this mixture back into soup pot. Let simmer, not boil for an additional 10 minutes. Turn off heat and add grated cheese. STir until well mixed.
*****If you soup is not as thick as you like, BEFORE adding milk, remove approximately one cup of broth and add 1 tbsp of corn starch. SLowly add this back in once it is smooth. Allow to come to a boil and repeat if it is still not thick enough for you. The milk is not going to thin the soup very much.
