Ingredients

    1 small onion, diced
    1C dry Israeli Couscous
    1/4C raisins
    1T curry powder
    around 3C boiling water
    1 small apple, diced
    6oz cooked chicken breast, diced (I used smoked)


Directions

1. Spray a large saucepan with spray oil and sautee the onions over med/lo heat. YOu want them to soften and brown without burning. When the onions are done to your liking, add couscous and heat over med/lo heat. Stir every 30 seconds until the couscous is nicely browning - around 5 minutes total.

2. Pour the boiling water into the couscous - just until it reaches the top of the couscous, then add 1C more boiling water. BE VERY CAREFUL - the boiling water will splash. Stir in raisins and curry.

3. Simmer gently over low heat until the liquid is almost gone, and the couscous is al dente - around 8-10 minutes. Remove from heat, stir in apples and chicken, cover and let sit for 5 minutes to finish cooking the couscous and heat the chicken and apples.

I suggest serving - hot or cold - inside my pita recipe (link below). Split 1 pita in half and put 1/2C couscous inside, along with some spinach or salad greens and a drizzle of cucumber sauce!

Makes 8 - 1/2C servings (4 cups total recipe)
