Ingredients

    3/4 cup uncooked quinoa
    1 10-oz. package frozen sweet corn
    1 29-ounce can black beans, drained and rinsed
    1/4 cup each red & green bell pepper, finely diced
    1 small onion, minced
    2 cloves garlic, minced
    1/2 cup cilantro, minced
    2 Tbsp. extra virgin olive oil
    2 Tbsp. lime juice
    1 tsp. cumin
    1 tsp. salt
    1/2 tsp. oregano
    1/4 tsp. pepper

Directions

Cook quinoa in 1-1/2 cups water in a saucepan or rice cooker, until all the water is absorbed and the grains have started to "pop." Cook frozen corn according to package directions; drain.

Mix cooked quinoa, corn, black beans, red and green peppers, onion, garlic, and cilantro in a large bowl. Whisk together olive oil, lime juice, cumin, oregano, salt and pepper and toss with the other ingredients. Chill before serving.

Makes eight 1-cup servings.
