Introduction
High Protein and Low Fat/ Low Sugar/ Low Carb!! Many natural and good for your body ingredients. Using a food processor allows textures to be blended to perfection.This cookie contains a combination of protein and complex carbs so that it serves as an energy booster, satisfies sweet tooth and leaves you satisfied appetite wise which can last throughout the day!
No oils or fats added although one could substitute coconut oil (wonderful health benefits, non-absorbed by body) for yogurt. Found in regular supermarkets with other oils in baking section. However, it is a solid so it is in a jar or plastic container.
Carbmaster yogurt is low carb low sugar yogurt purchased from Kroger.
Soy flour is available in baking section of supermarkets. Lindt 85% cocoa chocolate Bar can actually be found in several places including Rite Aid and other drug stores in candy row. There are other brands also, This happens to be a great one with only 5 grams of carbs in 4 squares! Protein Isolate powder is available from any health food store and also Walgreens, Rite Aid, Walmart, Target carry in sections near vitamins. Ingredients

3/4 cup Protein Isolate Powder. Can be plain or vanilla. (Purchase from health food store i.e GNC, Netrition.com, Vitamin Shoppe . )
1/8th cup soy flour
1/4 cup lightly ground quick oats oatmeal (use food processor)
1/4 cup quick oats oatmeal not ground
1/4 cup lightly ground almonds (use food processor)
1/8th cup ground All bran cereal (use food processor)
1/4 cup egg beaters (or 1 egg)
1/4 cup splenda baking blend or regular baking splenda 1/4 cup plus 2 Tblspoons
2 Tblspoons Splenda Brown sugar blend
3/4 tsp salt
1 tsp Baking powder
1 tsp baking soda
1 tsp vanilla extract
1/4 cup cocoa nibs (all natural, health food store) grind in food processor with Next ingredient
4 squares Lindt 85% cocoa chocolate bar (grind in food processor with cocoa nips
Optional- walnut halves, quartered, @ Tablspoons or as desired. This would provide a nice chunk tot he cookie of healthy super food goodness!.
Directions
Mix egg beater and applesauce and yogurt with sugars till well blended. Add vanilla.
Combine Protein isolate powder, soy flour, ground oatmeal, ground all bran cereal, ground almonds, salt, baking powder, baking powder. Blend with wire wisk.
Add dry ingredients to wet ingredients. Stir slowly. Add ground chocolate mixture (cocoa nibs and cocoa squares). If mixture is too wet, add 1/4 cup of any combo of the ground flours or protein powder.
Drop spoonfuls onto lightly sprayed cookie tray.
Bake at 350 for 18 minutes. Let sit for 1 minute before using metal spatula to take cookies off tray. Makes about 30 cookies. Let stand for 20 minutes before putting in container.
