Ingredients

1 tbsp olive oil
2 cups of finely chopped onions
2 red bell peppers, chopped into bite sized pieces
2 yellow bell peppers, chopped into bite sized pieces
2 cloves garlic, minced
1 tsp chili powder
1 tsp ground cumin
1/4 tsp red pepper flakes
1/4 tsp cayenne pepper
2 tsp salt
1/2 tsp pepper
2 28 oz cans of diced tomatoes, with juice (no salt added)
4 chicken breasts, cooked, cut into bite sized pieces
Directions
Cook chicken in a baking dish in oven and then cut into bite sized pieces, set aside.
In a large soup pot cook onions in olive oil until translucent, then add garlic and cook for 1 more minute. Add the peppers, spices, and tomatoes and bring to a boil, then reduce heat and simmer for 20 minutes. Add chicken and continue cooking another 20-30 minutes. Serve with no-sugar added corn bread or by itself. Freezes well too!
