Ingredients

1 large egg white
1 Tbsp water
1 tsp salt
1 lb unsalted raw nuts
1/2 cup sugar
2 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground coriander
Directions
1. Adjust an oven rack to the upper-middle position and heat the oven to 300 degrees F.
2. Line a baking sheet with parchment or wax paper and coat with vegetable oil spray (Pam Spray).
3. Whisk the egg white, water and salt in a large bowl.
4. Add the nuts and toss to coat. Let the nuts drain thoroughly in a colander, 4-5 minutes.
5. Mix the sugar, cinnamon, ginger and coriander in a large bowl.
6. Add the drained nuts and toss to coat with sugar and spice mixture.
7. Spread the nuts evenly onto the prepared baking sheet and bake until they are dry and crisp, 40-45 minutes, rotating the sheet halfway through.
8. Cool the nuts completely then break them apart and serve. Can be stored in an airtight container for up to 3 weeks.
Yield - 5 cups = 15 servings
