Ingredients

1/4 cup all-purpose flour
1/4 cup whole wheat flour
1/2 tablespoon wheat germ
1/4 teaspoon salt
1/4 teaspoon cinnamon
¾ teaspoon baking powder
1/4 teaspoon baking soda
1 egg white
1 tablespoon honey
1/4 teaspoon vanilla
1/2 cup buttermilk
1 T butter, melted
Directions
1. In a large bowl, sift together the all-purpose flour, wheat flour, wheat germ, salt, cinnamon, baking powder and baking soda.
2. In a blender, purée the egg white, honey, vanilla, buttermilk and melted butter until thoroughly combined, about 30 seconds.
3. Gently whisk the dry and liquid ingredients together to form a batter.
4. Heat a griddle or large skillet over medium-low heat. Grease the surface, then ladle batter to form each pancake. Depending on the size of your pan, you may need to do this in batches. Cook until puffed and golden brown, about 1 1/2 to 2 minutes on each side.
