Ingredients

1 lb black eyed peas, cooked without spices for 3 hours
4 cups brown rice, cooked
1 lb lean ground beef, cooked
1 onion chopped
1 cup celery chopped
1 green pepper chopped
1 16 oz can diced tomatoes, no salt
1 1/2 tsp thyme
3/4 tsp cayenne pepper
Directions

Soak black eyed peas in water overnight. Drain. Add 10 cups of water and cook, covered with 2 bay leaves for 3 hours. Add onion, green pepper, celery and spice. Cook 30 minutes or until peas are tender. While black eyed peas are cooking, cook brown rice in a separate pot (easy in a rice cooker -follow directions)
Cook ground beef.
Add rice, beef and tomatoes to black eyed peas. Adjust seasonings
Freezes well.
