Ingredients
-
2 cups flour
2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
6 tablespoons Splenda
4 tablespoons unsweetened cocoa powder
2 large eggs
1 1/2 cup skim milk
2 tablespoons white vinegar
1/2 cup sour cream
4 teaspoons vanilla extract
2 teaspoons red food colouring (or more if you want them redder!)
Directions
Makes about 24 pancakes. A serving size is one pancake.
This is my slightly amended version of the original recipe, with some berries in it, milk and vinegar instead of buttermilk, and Splenda instead of sugar. I also doubled it, because 12 pancakes definitely isn't enough for my family! Feel free to add more berries to taste, I would have liked some more myself!
1. Combine milk and vinegar and sit on counter.
2. Heat berries in microwave and mash with fork or spoon, making them more mashed with lots of juice.
2. Combine all dry ingredients in a large bowl and set aside.
3. In a separate bowl, whisk together the egg, berries, sour cream, food colouring, vanilla, and milk/vinegar mixture.
4. Add wet ingredients to dry and mix until combined.
5. Make delicious pancakes!
