Ingredients

    *Note--this is not an original recipe, just something I have adapted.

    1/2 c. whole wheat couscous
    1/2 cup water
    1/4 cup lemon juice
    1 Tbsp. extra virgin olive oil
    1/2 cup shallot, finely chopped
    1 garlic clove
    1/4 c. julienned spinach
    1/2 c. italian parsley, chopped
    1/2 c. cucumber, chopped
    1/2 (or a little more) cherry tomatoes, halved
    Salt and pepper to taste

Directions

1. Bring 1/2 cup of water to boil, add dry couscous. Turn off heat and cover immediately, let steam for 6 minutes. Fluff couscous with a fork and transfer to a bowl to cool.

2. In a small bowl, whisk together lemon juice, olive oil, salt and pepper. Add to couscous once it has cooled.

3. Add chopped shallots, spinach, parsley, and the garlic clove (minced). Mix well.

4. Add cucumbers and tomatoes. Toss.

Makes 4 side servings or 2 lunch portions.
