Introduction

Really yummy alternative to regular pound cake, serve with sliced strawberries in Splenda with low sugar whipped cream for a decadent (low carb!) dessert. Ingredients

    2 cups Almond Flour
    5 eggs, separated
    1 cup Splenda
    1 cup Land O Lakes Fresh Buttery Spread
    1 tsp. each: vanilla extract, lemon extract
    1 tsp. baking powder

Directions

Preheat oven to 350 degrees. Beat the egg whites; cream together with the sugar substitute; one by one add the yolks until smooth. Add in the LOL spread. Combine in a separate bowl the almond flour and baking powder; slowly add to the egg mixture. Add the extracts. Pour into a greased 9" cake pan or 9x9 casserole dish. Bake for 50-55 minutes. Serves 9.
